So, as you may have seen on my instagram I have made a banana bread. Now, I would call myself a VERY ameteur chef as I do not bake a lot and sometimes it tends to fail. But with this simple banana bread it cannot go wrong and it is a delicious comfort food that is quite healthy as well. If you are peckish for some cake but want to keep it healthy then I would highly recommend making this.
Ingredients:
2- 3 very ripe bananas - I would recommend three as we found it could of tasted stronger of banana.
76 grams of butter (melted) (1/3 cup)
96 grams of sugar (3/4 cup)
1 large egg
1 tsp of vanilla extract/ golden syrup
180 grams of self-raising flour (1 1/2 cups)
1/2 or 1 tsp of cinnamon (depends on your preference)
Optional toppings (icing):
Icing sugar
Water
Method:
First preheat the oven to 350 degrees F/ 177 degrees C/ Gas mark 4.
Grease you loaf pan, I used butter but if you want to make it healthier you can use one calorie spray or coconut oil as an alternative. I would recommend a 4x8 inch pan but I didn't have one as mine was smaller and due to lockdown I cannot get another one so I used a smaller one.
To start the mixture, in a mixing bowl, mash the bananas until they are near a liquid consistency.
Then add the melted butter, egg and vanilla extract or golden syrup to the mashed banana. Stir this until it is all mixed together.
Next, add the self-raising flour, sugar and cinnamon. Stir again, folding it in until it is all combined, I found it wasn't like a batter and more like a dough so I added a dash of milk to make it more like a batter.
Make sure it is all combined!
Then pour it into your greased pan (make sure it is greased well as it will make it easier to get out).
Then bake in the oven for 45 minutes, this may vary depending on the oven. So, for more modern ovens it may take 30/40 minutes or for older it may take longer so keep an eye on your cake.
When you think it is done use the toothpick method (stick a toothpick in the bread and if it comes out clean it is done and if batter appears on it then put it back in the oven for longer).
Remove it from the oven and put it on a cooling rack.
Whilst it is cooling mix together 2 parts icing sugar and one and a half part water (you can adapt this if you want it thinner or thicker) until you get enough icing for a light drizzle over the cake. Then pour a dash of cinnamon into it to give it a bit of flavour to match the warmth of the bread.
Then once it had cooled (Me and my boyfriend, Arthur, made this quite late at night and were dying for a slice so we wafted it with oven tins for ages!) drizzle over the icing and then let it harden. I would recommend leaving it to fully cool before slicing it so that you can get cleaner slices.
Finally, enjoy the bread!
