My Five Favourite Healthy Breakfasts

Writer's picture: Jessica-Jayne Jessica-Jayne

So I am 100% a morning person, it is when I feel the best in the day and I can really decide how my day is going to be (got to have a good mindset at the beginning of the day) as I know I am the one who decides how I am going to enjoy the day. I love to start of my day which makes my heart feel happy and for me that is mainly sweet food. I have the biggest sweet tooth!! But there is one savoury breakfast you just can't beat and it is so simple and easy like a lot of the breakfasts I have.

Porridge with Banana and Honey

I love this as a breakfast as it is quick and easy and super delicious. It is a slow burning breakfast so it ensures that you will have energy throughout the day and personally I don't feel hungry for AGES after. You also get on of your five a day in just as you start the day which is always a positive. For me this just starts my day off right. Personally, I like to use locally sourced honey as it helps with my hayfever (I get severe hayfever) and it also helps small honey business'. This is a healthy breakfast that can enable you to feel great throughout the day!

Yoghurt, berries, seeds and granola

For me this is a refreshing breakfast in the summer. It can really help wake you up and it always puts me in such a good mood.

For this breakfast, you will need:

  • Low fat greek yoghurt

  • Strawberries (or a berry of your choice)

  • (Locally sourced) Honey

  • Chia seeds

  • Granola

This is a really great breakfast that is so interchangeable. You can add different seeds and fruit or flavoured yoghurt. I have tried this and I have found this to be my favourite combination. You can really experiment with this breakfast which can contribute to a happy morning.

French toast with strawberry and honey

Now, this recipe takes a longer time to make but it is still delicious. For this I like to use Easy Cheesy Vegetarians recipe as it is delicious and still healthy. For this you will need:

  • Spray oil

  • 4 egg whites

  • 4 tbsp skimmed milk

  • 2 slices wholewheat bread (personally I use white)

For the full recipe with the method go here: https://www.easycheesyvegetarian.com/healthier-french-toast/

I would then put cinnamon and honey on it, then top it with sliced strawberries. Personally I love this breakfast on a weekend as it takes a little more time than the others but is still a quick breakfast. Also, a nice touch to this breakfast is to add fat free yogurt with it as a refreshing touch.

Poached Eggs on Toast.

Now this is a simple and easy breakfast that is like an English breakfast but wayyy healthier. Instead of frying your eggs poach them in water as it is so much better for you. Then have a healthier spread on your toast of choice as it will reduce the levels of fat.

Now for me I like just add a bit of salt and pepper and leave it as that. But, this is also a really interchangeable breakfast as you can experiment with it. Examples of foods you can add are:

  • Avocado

  • Ham

  • Spinach

  • Sauces of choice (BBQ sauce, for example)

This is really easy and delicious and is perfect when you are in the mood for a savoury breakfast!

Banana and Blueberry Omlette

I love this breakfast because my mum used to make it for me every saturday morning when I would watch TV after a week at school. It was healthy but also so so so delicious. I will definitely make this for my children when I am older. We used to split it in half when I was younger but as I grew up I would eat a whole on. The ingredients are:

  • 2 tablespoons rolled oats

  • 1 medium banana

  • 2 large eggs

  • pinch of salt

  • ½ teaspoon vanilla extract (optional)

  • 1 teaspoon coconut oil for greasing the pan

  • Blueberries (handful)

This really is my favourite healthy weekend meal! It is filling and helps reduce snacking and you can add yoghurt and honey to it as well and it is so yummy. I would 100% recommend you trying this as it is easy and anyone can try it.

I hope this blog post has helped motivate you to find some breakfasts for throughout the week that is healthy and easy for anyone. I have found these so helpful to shake up my breakfasts and make my mornings interesting and I hope this can do the same for you.

Many thanks,

Jessica-Jayne x
